1 pound lean beef mince, (optional ground turkey/chicken)
1 yellow bell pepper
1 red bell pepper
5 ounces tomato paste/puree
1 tsp chili powder (optional)
1 tsp salt (or to taste)
2 tsp crushed garlic
1 tbsp light olive oil
1/3 cup freshly grated parmesan cheese
Heat olive oil in skillet, add garlic and onions til brown
Add ground beef to the skillet over medium heat, breaking it up with a fork as it cooks.
Cook just until it loses its pink color. Drain off any fat.
Add the peppers and the chili to the mince.
Once the peppers are tender add the salt and the tomato paste.
Turn the heat low and allow to simmer for 20 minutes.
Serve on a bed of rice noodles, quinoa or brown rice, sprinkle with parmesan.
