Slim Trim Recipes
1.5 lbs or 3 very large chicken breasts, boneless & skinless
1 1/4 cup almonds, ground (almond meal works too)
1 tsp dried parsley
1 tsp Paprika
1/4 tsp Peri Peri (Chili powder)
1 tbsp garlic or onion powder
3/4 tsp salt
2 eggs, large
Cooking spray (zero calorie or Weighless spray)
Preheat your oven to 400 degrees Fahrenheit.
Prepare your almonds into almond meal. Make your own by using a food processor! Zap the nuts for about a minute, you will see when it looks like meal!
In one small bowl, mix ground almonds (almond meal), garlic (onion) powder, parsely, paprika, peri peri and salt.
In another small bowl, whisk the eggs.
Cut the chicken breasts into 1/2 inch thick strips lengthwise. Cover with a piece of plastic wrap and pound with a meat tenderizer a few times.
Dip each strip into the egg, coat completely in almond mixture and place on prepared baking sheet. Bake for 15 minutes on one side, flip and bake for another 12-15 minutes or until golden brown.
